First Meals

I bought a baby cook book when Aubrey started eating solid foods called "First Meals" by Annabel Karmel. She breaks up the recipes into age groups and it has been really helpful for me. I enjoy making Aubrey her baby food however I always have a few cans in the pantry for those crazy days when I don't have time to make something fresh. I normally make big batches and then freeze the food into smaller portions and that makes my life so much easier!
I made this meal last night and she loved it. I knew she would because this child loves yogurt and avocados (her two favorite snacks are yobaby organic yogurt and bananas & avocados mixed together). Anyways, I wanted to share the recipe from "First Meals" with my mommy friends because it was super easy and fast.

California Chicken (9-12 months)

1 1/2 oz cooked chicken (I have chicken frozen for her so I just thawed some)
1 tomato peeled, seeded, and chopped (I left some seeds its hard to get them all)
1 oz avocado
2 tbsp mild plain yogurt
1 1/2 tbsp grated Cheddar cheese

Chop the chicken, then combine it with the remaining ingredients. Blend the mixture to the desired consistency. Also, you can use the ingredients to make yourself a salad or sandwich at the same time.

Nutritional information
Rich source of calcium, folic acid, protein, vitamin A, B vitamins, vitamin C, vitamin E, and zinc.
